Cascara – Dried coffee peel, 100 gr

Rubya del Vulcano is our 100% organic cascara – the dried skin of coffee cherries sourced from small farms on the volcanic slopes of North Kivu, in the Democratic Republic of Congo. This region offers exceptional conditions for growing arabica coffee: high altitude, regular rainfall, and some of the most fertile volcanic soils on the African continent.

The processing is meticulous: cherries are hand-selected based on their sugar content, then gently laid out on raised beds to dry slowly under the sun. They are later dry-pulped. This method enhances the fruity aromas but requires constant monitoring to prevent unwanted fermentation.

How to enjoy Cascara? As a hot or cold infusion. For a hot brew, use 5 g of cascara per 250 ml of water. Steep for 4–5 minutes at 90°C, strain, and sip to your taste. For a cold brew, use the same proportions and let it steep in the fridge for 10–12 hours. Once filtered, serve it with ice.
